Canadian restaurant operator Cara Operations isn’t giving up on its full-service brands, even as it looks to speed growth with fast-casual. The 125-year-old parent of established brands Harvey’s and Swiss Chalet went public earlier this month, with 837 restaurants and a goal to get into the fast-casual space as part of its mission to hit $2.5 billion to $3 billion in sales by 2020.
