Dallas-based Cowboy Chicken hopes to double the number of its restaurants to 45 by 2018, and will roll out a new restaurant prototype as it expands. The plan to grow comes on the heels of a 50% spike in sales this year compared to 2015. Read The Dallas Morning News story here
