New Orleans developer Will Donaldson brought his own spin on the food hall concept to the United States in 2014 with the opening of St. Roch Market. Under the moniker Politan Row, Donaldson’s project is expanding to Chicago and will feature eateries from 12 chefs, including Floriole’s Sandra Holl and Bumbu Roux’s Chris Reed.
