Romacorp, the parent of barbecue chain Tony Roma’s, has created a smaller format prototype and is preparing to launch a fast-casual concept called Bones & Burgers in Tampa, Fla., next month. The company aims to open about 200 new locations over the next 10 years, and the new formats are designed to reduce startup costs for franchisees and make the brand fit into more non-traditional venues like college campuses and airports.
